On the Hillsides of Gascony (Southwest France), our vineyards thrive in a privileged terroir composed of sandy-silty and clay-limestone soils, with plenty of water and sunshine. Before harvest, the grapes are carefully monitored and tasted. This quality control ensures the berries are at their best and helps determine the optimal harvest time based on their aromatic ripeness. The grapes are then harvested at night, during the coolest hours, to preserve their quality.

Winemaking

Before vinification, the grapes are destemmed. The wine is then obtained through gentle pressing, followed by a short alcoholic fermentation in vat at 25°C, then malolactic fermentation and aging on fine lees. Tasted at each stage to ensure quality, the wines are then blended according to their aromatic profile to offer, year after year, consistent expressions in terms of aroma, freshness, and structure.

The process for dealcoholizing the wine consists in using an innovative low-temperature, vacuum partial evaporation process for making all of the alcohol
evaporate. This technique does not alter the wine and ensures that its aromatic profile is preserved.
